Pasta al a Greque

1 block tofu, pressed and sliced into 3 thin pieces

1/4 cup tamari/soy sauce

1/4 cup vinegar

1/4 cup olive oil

1/2-inch piece of ginger, chopped

2 cloves garlic, minced

1 box pasta

2-3 tomatoes, chopped

1/2-1 onion, chopped

1/2-1 block feta cheese, crumbled

1/3 cup pepperoncinis, chopped

1/3 cup kalamata olives, chopped

1/3 cup walnuts, chopped

fresh spinach, chopped

 

Place tofu slices into flat container. Mix together tamari, vinegar, olive oil, ginger, garlic and drizzle over tofu. Marinate for an hour, turning pieces over halfway through. Squeeze out excess juice and place tofu in oiled baking pan. Bake at 350 for about 15-20 minutes, turning pieces over halfway through.

Place tomatoes, onion, cheese, pepperoncinis, olives, walnuts, and spinach into large bowl and mix together.

Cook pasta according to directions. Drain, add hot to the mixture in the large bowl, and stir. Toss with olive oil.

Chop tofu into bite sized pieces, stir into mixture, and serve.
